Matsutake (Pine) Mushroom Chicken Soup!

Matsutake mushroom, also named as pine mushroom, is one of the most famous fungus  in the world, it is also known as "King of Fungi".  Pine mushroom contains 18 kinds of amino acids, 14 kinds of essential trace elements, 49 kinds of active nutrients, 5 kinds of unsaturated fatty acid, nucleic acid derivatives, peptides and other rare elements. There are also 3 kinds of precious active substances within the pine mushroom which can not be found in other food. 

In addition to its rich nutritional value, the taste of pine mushroom is more attractive. Today we are going to learn how to cook pine mushroom chicken soup in an easy way at home. 

Ingredients:

40g Dried wild pine mushroom

2-3LB chicken (cut into small pieces)

3 pieces ginger slices

a little bit salt as desired

Directions: 

1: Wash the dried pine mushroom a couple of times and rinse thoroughly. Then soak the dried pine mushroom with warm water for about 30 minutes until soft.

2: Boil 3 Liters water in a large pot. Once the water boils, add the chicken into the pot. Keep boiling for 5 minutes. Prepare a large strainer ready at the sink, and dump the entire pot into the strainer, the cloudy and scummy water will go down the drain. Wash your pot, getting rid of any scum that clings to sides. Rinse the chicken pieces and prepare for use.

3: Refill the pot with 2-3 Liters cold water, add the chicken pieces and ginger slices into the pot, bring the water to a boil, then turn the heat to medium-low and simmer for 2 hours. Tips: The water used to soak pine mushroom should also be added to the pot, which can help increase the fragrance.

4: Add the well soaked pine mushroom and simmer for another one and a half hour.

5: Add a little bit salt as desired. Then serve on table!
